What to eat in Bukhara: planning a small food itinerary

Spread Bukhara’s food discoveries across several meals rather than trying everything at one lunch. Lighter pauses can make an Old Town walk more enjoyable.

Begin with a regional dish

Look for the local plov style called sofi osh and ask how the restaurant prepares it. At another meal, try a soup such as shurpa or something the kitchen recommends freshly made. A dish name does not guarantee an identical recipe everywhere.

Order in stages

Check portion size or weight, additions and the price of bread and tea. A group can start with fewer dishes and order more later. Shared platters work only when everyone is comfortable with the ingredients and serving style.

Look beyond the view

Consider cleanliness, a clear menu and the total including service. A scenic table beside a monument does not automatically mean better cooking. Explain dietary needs carefully: vegetables may use meat stock, while pastries can contain animal fat or dairy. Tea and one local dish can be enough for a satisfying evening.
